Baked Onions~
Baking onions in their skins is a very traditonal way of cooking and serving them as a stand alone vegetable. Here I have cooked them whole and halved to save on cooking time.
Serves: 2
Ingredients
- 1 colossal onion*, sliced in half, or whole
- 1 tablespoon butter* or coconut oil*
Instructions
- Preheat oven to 400 degrees.
- Halves
- Cut onion in half leaving peels in place and lay flat side down in baking dish. Add water to cover bottom of dish.
- Bake in preheated oven for approximately 11/2 hours; remove from oven.
- With a sharp knife trim the top and bottom of the onion and remove peel.
- Place flat side up on plate and drissle with butter or coconut oil; salt and pepper to taste.
- Whole
- Leaving the peels in place, score the onion in quarters. This will allow for easy removal of peels later.
- Bake in preheated oven for approximately 21/2 hours; remove from oven.
- With a sharp knife trim the top and bottom of the onion and remove peel.
- Place on plate and drissle with butter or coconut oil; salt and pepper to taste.
- To cook smaller onions simply change cooking time. Halves cook much more quickly than whole onions.
