Oven Asparagus Puff ~
This dish is perfect for lunch or a lite dinner. The Muenster cheese compliments the delicate asparagus flavor.

Ingredients
- ¾ - 1 pound asparagus*
- 4 tablespoons butter*
- 2 tablespoons onion, chopped*
- ½ teaspoon sugar
- salt to taste
- 6 eggs*
- ⅓ cup milk*
- freshly ground pepper*
- 1½ cups Muenster cheese, grated
Instructions
- Preheat oven at 425 °
- Cut asparagus into 1" pieces; approximately 2 cups. In saute pan melt 2 Tablespoons butter; add onion and cook until soft and golden. Add asparagus, sprinkle with sugar, and salt; toss for 3-5 minutes until bright green.
- Together beat eggs and milk, adding salt and pepper to taste. In baking dish, melt 2 tablespoons butter to coat pan. Pour in egg mixture and place in oven until eggs set about 5 minutes. Remove from oven and add asparagus and onions spread evenly over eggs. Bake for another 5 minutes. Remove from oven and cover asparagus with grated cheese, baking for an additional 10 minutes or until cheese is slightly browned.
I have very slightly altered this recipe by changing out the cream for milk and by eliminating a step that involved steaming the asparagus. I prefer the asparagus stir- fried rather than steamed.
