Strawberry, Bacon, Pecan Salad with Brie Dressing
One way to keep salad interesting is to change out the ingredients. In this salad, the cheese is used to make the dressing, giving it a savory, creamy, sweet and salty taste. The salad is also very basic with just lettuce, onion, pecans, and strawberries. Lettuce never tasted so good.
Serves: 6
Ingredients
- 1 head of lettuce*( shredded, cut in very thin slices)
- ½ pound bacon*(cut to small pieces)
- 1 quart strawberries*(sliced)
- ½ cup Pecans or Walnuts(whole or chopped)
- ½ red onion*(finely chopped)
- Dressing
- 1 wedge Brie cheese(wax like coating removed)
- 4-5 strawberries*(whole)
- ¼ cup olive oil*
- 3 tablespoons Balsamic vinegar
- 1 teaspoon sweetener (sugar, honey, erythritol or other)
- 1 tablespoon water
- salt and pepper to taste
Instructions
- Remember that the quantity of ingredients is suggested. It is fine to add a little of this and a lot of that.
- In large bowl or on individual plates, add shredded lettuce. On the individual plates I added two lettuce leaves for the look. Next add bacon, strawberries, pecans, red onions and set aside. Toss before serving.
- In blender add Brie cheese, strawberries, olive oil, Balsamic vinegar, salt, pepper, sweetener, and water. Mix until smooth. You are looking for a creamy ranch like dressing and can add water slowly to thin if needed.
- Serve salad and top with dressing or add dressing to salad before serving and toss well. This salad matches well with any meat.
